Japan's culinary heritage is filled with intricate flavors and cultural depth, woven together by the artful use of umami. Let's now see what AI can create by starting with the standard pasta primavera, but put it into a Japanese-style format!  The first attempt created a dish that looked good but used rice instead of noodles.  Thinking that was too much of a stretch, I asked again to use a tradational noodle that might be found in Japan rather than rice.  The result looks good to me, so here it is!

  • 2 cloves of garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Toasted sesame seeds for garnish

Instructions

  1. Cook udon noodles according to package instructions, then drain and set aside.
  2. In a pan, heat olive oil over medium heat and sauté minced garlic until fragrant.
  3. Add julienned carrots, sliced bamboo shoots, and sliced shiitake mushrooms to the pan. Cook until slightly tender.
  4. Toss in blanched snap peas and cooked udon noodles.
  5. Drizzle soy sauce over the mixture and toss to combine.
  6. Add lemon zest and cilantro leaves, then gently toss again.
  7. Season with salt and pepper to taste.
  8. Serve the udon primavera in bowls, garnished with toasted sesame seeds.
